8 large red potatoes, cooked until tender, cubed
6 large hard boiled eggs, chopped
1 medium onion, chopped finely
4 stalks of celery, chopped finely
Cole Slaw Dressing (we use Marzetti’s)
1/2-1 jar of Candied Hot Peppers
Cut potatoes in cubes and place in bowl.
Add eggs, onion and celery Toss together with salt and pepper to taste
Add dressing and mix well. Chill for about 1 hour. Add Candied Hot
Peppers and mix well again. Chill until ready to serve.
This is a great alternative to traditional potato salad. It adds just a little zip to it – you can also cut a block of sharp cheddar cheese into small pieces and add it to the salad.
